Easy Maine Lobster Roll Recipe
Prep: 10 minutes
Refrigerate: 30 – 60 Minutes
- ½ pound Maine lobster meat
- ¼ cup mayonnaise
- ½ peeled and diced cucumber
- 2 sliced scallions
- ½ tbs tarragon
- Salt and pepper
- 1 Cape Porpoise Lobster buns (toasted to preference)
Step 1: In a mixing bowl, combine Maine lobster meat, mayonnaise, cucumber, scallions, and tarragon (add a pinch of salt and pepper). Mix well.
Step 2: Cover the bowl and chill for 30-60 minutes.
Step 3: Preheat skillet over medium-low heat. Butter roll and toast each side until golden brown.
Step 4: Fill Cape Porpoise Lobster buns with lobster meat mixture.
