Grilled Lobster TailNational Lobster Day

 

Ingredients

  • 1/4 c. melted butter
  • 1 tbsp. lemon juice
  • 1/2 tsp. lemon zest
  • 2 tbsp. freshly chopped chives, plus more for garnish
  • 2 tbsp. freshly chopped parsley, plus more for garnish
  • 1 clove garlic, minced
  • 1/4 tsp. kosher salt, plus more for seasoning
  • 4 (8-oz.)  Fresh Maine Lobster Tails
  • Extra-virgin olive oil, for brushing
  • Freshly ground black pepper
  • Pinch of crushed red pepper flakes
  • Lemon wedges, for serving

 

Directions

  1. Preheat a grill or grill pan over medium heat. In a small bowl, whisk together melted butter, lemon juice, zest, chives, parsley, garlic, and salt.
  2. Using kitchen shears, cut top of lobster shell from meaty portion of tail. Using a knife, cut halfway through meat down the center, without cutting all the way through. Insert a skewer lengthwise through the lobster to keep lobster from curling up when cooked.
  3. Brush all over with oil and season with salt and pepper. Grill flesh side down until lightly charred, about 6 minutes. Flip lobster and dollop a spoonful of butter mixture on flesh side. Grill until just cooked through, about 5 minutes more.
  4. Remove lobster from grill and sprinkle with red pepper flakes. Serve with lemon wedges.

Lobster Mac & Cheese

Ingredients

  • 1 lb. cavatappi
  • 1/4 c. butter
  • 1/4 c. all-purpose flour
  • 2 1/2 c. whole milk
  • Pinch nutmeg (optional)
  • Kosher salt
  • Freshly ground black pepper
  • 1 1/2 c. shredded white cheddar
  • 1 c. shredded Fontina
  • 3/4 c. freshly grated Parmesan, divided
  • 1 lb. Fresh Cooked Lobster, roughly chopped
  • 1/2 c. Panko breadcrumbs
  • 1 tbsp. extra-virgin olive oil
  • 1/4 c. freshly chopped parsley, for garnish

 

Directions

  1. Preheat oven to 375°. In a large pot of salted boiling water, cook cavatappi until al dente. Drain and set aside.
  2. In a large saucepan over medium heat, melt butter. Sprinkle over flour and cook until slightly golden, 2-3 minutes. Pour in milk and whisk until combined. Season with nutmeg if using, salt, and pepper. Let simmer until thickened slightly, about 2 minutes.
  3. Remove pan from heat and stir in cheddar, Fontina, and 1/2 cup Parmesan and whisk until smooth. Fold in pasta and lobster and transfer into a 9″-x-13″ baking dish.
  4. In a medium bowl, combine Panko, the remaining Parmesan, and oil. Season with salt and pepper and sprinkle over pasta. Bake until bubbly and golden, 20-25 minutes.

Butter-Poached Lobster with Asparagus and New Potatoes

Ingredients

  • 1 pound very small waxy potatoes
  • 2 1 1/4-lb. Live Maine Lobsters
  • 1 bunch asparagus, trimmed
  • Kosher salt
  • 1/2 cup (1 stick) unsalted butter, cut into pieces
  • 2 tablespoons chopped fresh flat-leaf parsley
  • Flaky sea salt (such as Maldon)

 

 

Recipe Preparation

  1. Place a metal steamer basket in a large pot; add water to a depth of 2″ and bring to a boil. Place potatoes in steamer basket; cover and cook until tender, 12–15 minutes. Transfer to medium bowl; set aside.
  2. Add more water to pot if needed to reach a depth of 2″ and place lobsters in steamer basket. Cover pot and steam lobsters until shells are bright red and meat is cooked through, 8–10 minutes. Remove from pot with tongs and let cool 5 minutes before cracking.
  3. Pick lobster meat from tail, claws, and knuckles and halve tails lengthwise; set aside.
  4. Meanwhile, cook asparagus in a large pot of boiling salted water until just tender, about 4 minutes. Drain; transfer to a large bowl of ice water. Drain; set aside.
  5. Bring 2 Tbsp. water to a simmer in a medium skillet over medium heat. Gradually whisk in butter, a piece at a time, until melted and completely emulsified; season with kosher salt.
  6. Add reserved potatoes, lobster, and asparagus to skillet and cook, tossing occasionally, just until warmed through, about 2 minutes.
  7. Serve lobster and vegetables topped with parsley and sea salt.
