Lobster Salad on Cucumber

Served on a cracker, these bite-sized snacks are both healthy and flavorful. Perfect for munching on while you mingle with guests.



  • Slice cucumber into 1/8 inch slices.
  • Chop lobster meat.
  • Toss lobster meat with mayo and red pepper.
  • Add salt and pepper to taste.
  • Spoon lobster mixture onto each cucumber slice.
  • Place cucumber slices on crackers and serve!

Lobster Bites

Another delicious (and easy to make) lobster appetizer, these lobster bites will be flying off the table faster than you can imagine.



  • Preheat oven to 350 degrees F.
  • Slice baguette into 1/8 inch slices, place on cooking sheet and toast in oven.
  • Chop lobster meat.
  • Toss lobster meat with mayo and celery.
  • Add salt and pepper to taste.
  • Spoon lobster mixture onto each toasted baguette slice and serve.

How You Can Incorporate Lobster in Your Thanksgiving Dinner

When you think of Thanksgiving food, you surely think of turkey, stuffing, mashed potatoes … but do you think of lobster? The Native American diet was heavy on shellfish, so lobster was most likely part of the first Thanksgiving dinner. Here are a few ideas to get you inspired:

Lobster mashed potatoes

Add the delicious taste of lobster to a classic holiday favorite with these easy-to-cook lobster mashed potatoes.


  • 6 to 8 Lobsters
  • 1 stick of butter
  • 10 potatoes
  • Dollop of sour cream
  • 4-5 cups fresh peas
  • Small can of evaporated milk
  • Salt and pepper to taste


  • Cook lobster.
  • Pick them clean and saute the lobster meat with butter until butter is orange. Add evaporated milk.
  • Cook potatoes and mash, adding sour cream as you mix.
  • Cook peas.
  • Serve mashed potatoes, topping with lobster and peas.

Lobster, pumpkin and ricotta ravioli

Looking for a different take on lobster pasta? Why not make this lobster, pumpkin and ricotta ravioli, and find out what a match made in heaven lobster and pumpkin can be?


  • 4.5 lbs lobster meat
  • 8 Tbsp. butter
  • 1 cup milk
  • Pinch of nutmeg
  • Pinch of cayenne pepper
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 4 Tbsp. mascarpone cheese
  • 3 Tbsp. canned pumpkin
  • Fresh egg noodle lasagna sheets
  • 2 Tbsp. melted butter (to seal ravioli)


  • Cook lobster and pick out meat.
  • Saute lobster meat with butter (about 4 minutes).
  • Add flour and milk, stirring over low heat until you have a sauce-y liquid.
  • Stir in ricotta cheese, mascarpone cheese and pumpkin.
  • Flavor with spices.
  • Cut egg noodle sheets into ravioli-size squares, adding lobster mixture to half.
  • Rub edges of squares with butter and top with another square, using a fork to seal them together.
  • Boil water and drop ravioli in, cooking for 5 minutes.

Start off your meal with a delicious lobster and corn bisque, which you can serve with a wedge of freshly baked cornbread.


  • 3 Tbsp. vegetable oil
  • 3 Tbsp. all-purpose flour
  • 1/2 cup minced onions
  • 1 cup corn kernels
  • 2 Tbsp. minced shallots
  • 2 Tbsp. minced celery
  • 1 Tbsp. minced garlic
  • 1 tsp. salt
  • 1/2 tsp. cayenne pepper
  • 1 cup fish stock
  • 2 bay leaves
  • 2 cups milk
  • 2 cups heavy cream
  • 1 tsp. crab boil
  • 1/2 lb. cooked lobster meat
  • 1/4 cup minced green onions


  • Heat oil in a large pot. Add flour 1 Tbsp. at a time, stirring 5-10 minutes until blended.
  • Add onions, corn, shallots, celery, garlic, salt and cayenne, stirring occasionally until the onions have softened.
  • Add bay leaves and bring to boil.
  • Add milk, cream, and crab boil, simmering for 30 minutes.
  • Stir in lobster meat and green onions, simmering for 5 minutes.
  • Ladle into bowls and serve.

Lobster with nutmeg vinaigrette and chestnut puree

This recipe is sure to wow your guests with its sophistication. The best part? You can make the vinaigrette and puree the day before, so all you have to do on Thanksgiving Day is cook the lobster.


  • 2 cups chicken stock
  • 2 cups apple cider
  • 6 diced shallots
  • 3 bay leaves
  • 2 Tbsp. sherry vinegar
  • 1/2 cup heavy cream
  • 1 1/2 tsp. nutmeg
  • 1 Tbsp. vegetable oil
  • 1 chopped onion
  • 30 oz. chestnuts
  • 3 Tbsp. maple syrup
  • 2 Tbsp. butter
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 4 chopped scallions
  • 2 Tbsp. chopped parsley
  • 10 lobsters
  • 1/4 lb. mixed salad greens


  • Combine 1 cup chicken stock with apple cider, shallots, bay leaves and sherry vinegar in a large saucepan, boiling 25 minutes (until reduced by half).
  • Add heavy cream and nutmeg, simmering about 5 minutes, then remove from heat.
  • Heat vegetable oil in a separate saucepan, adding onion and cooking until softened.
  • Add remaining chicken stock and chestnuts, simmering about 4 minutes.
  • Remove from heat, then add maple syrup and butter.
  • Transfer contents to blender and puree until smooth.
  • Blend in sour cream, then transfer to saucepan, cover and keep warm.
  • Reheat nutmeg vinaigrette, adding scallions, parsley, salt and pepper.
  • Cut lobster tail meat into chunks, then add back into tail.
  • Spoon vinaigrette over lobster tails and place on platter with puree.

Herbed Oyster Stuffing

A tasty twist on a Thanksgiving classic, adding oysters to your stuffing will have all your guests reaching for a second helping. Mixed with bacon, celery and herbs this simple yet gourmet side dish is the perfect way to add a taste of the ocean to your plate.


  • 1 lb. French country bread
  • 6 stalks celery
  • 4 shallots
  • 4 cloves of garlic
  • 2 Tbsp. thyme leaves
  • 1/2 cup parsley leaves
  • 3 slices thick-cut bacon
  • 1 cup shucked oysters
  • 1/4 cup butter
  • Pepper to taste


  • Preheat oven to 350 degree F.
  • Spread bread evenly in an 18 x 12″ baking pan. Bake 30 minutes (until golden brown).
  • Chop celery, shallots, garlic, thyme and parsley. Cut bacon into 1/4″ pieces. Chop oysters and refrigerate.
  • Cook bacon in skillet until crisp, then transfer to bowl with bread.
  • Add celery and shallots to skillet, cooking for 5 minutes (until tender), then transfer to bowl with bread.
  • Add parsley, oysters, oyster liquid and black pepper to bowl with bread as well, then stir.
  • Transfer stuffing to greased baking dish, cover with foil and bake 30 minutes.
  • Uncover and bake 20 minutes longer or until top is golden brown.

Crab Stuffed Artichokes

A unique and creamy vegetable, the artichoke pairs perfectly with crab meat. A tasty side dish that looks like a work of art, more than one of your loved ones will be asking for this recipe at the end of the evening.


  • 8 oz. crab meat
  • 1 3/4 cups breadcrumbs
  • 1 minced shallot
  • 1 chopped celery stalk
  • 2 Tbsp. capers
  • 2 tsp. Old Bay seasoning
  • 1/4 tsp. pepper
  • 2 Tbsp. lemon juice
  • 1 Tbsp. olive oil
  • 4 artichokes
  • 3 cloves minced garlic
  • 2 cups chicken broth


  • Preheat oven to 375 degrees F
  • To prepare stuffing: Combine crab meat, breadcrumbs, shallots, celery, capers, Old Bay seasoning, pepper, lemon juice and oil in a bowl.
  • To prepare artichokes: Cut off the top 1 inch of leaves from an artichoke. Remove the outer layer of small, tough leaves from the stem end. Snip all remaining spiky tips from the outer leaves. Cut off the stem to make a flat bottom. (Discard the stem.) Starting at the outer layers and progressing inward, pull the leaves apart to loosen. Pull open the leaves at the center until you see the spiky, lighter leaves around the heart. Pull out those lighter leaves to expose the fuzzy choke. Scoop out the choke with a melon baller or grapefruit spoon and discard. Repeat this step with the remaining artichokes.
  • Spoon 1/2 cup stuffing in the center of each artichoke, then stuff an additional 1/2 cup between the outer leaves with a small spoon.
  • Heat 2 tsp. oil in a Dutch oven, then add garlic and cook until fragrant.
  • Add broth and lemon juice, bringing to a simmer.
  • Stand artichokes upright in the pan, drizzling each with oil.
  • Cover pot and bake in over about 50 minutes.
  • Uncover and bake about 10 minutes longer (until stuffing golden brown).
  • Remove artichokes and serve.

Lobster Stuffed Squash

Buttery and delicious, acorn squash will add a bright and festive flavor to your dinner table. A fall favorite, we recommend stuffing your squash with lobster for a gourmet treat. Halved, stuffed squash also make a beautiful presentation your guests will love.


  • 4 acorn squash
  • Olive oil
  • Salt and pepper to taste
  • 2 lobsters 
  • 12 slices of bacon
  • 3 cups portabella mushrooms
  • 2 cups breadcrumbs


  • Preheat oven to 375 degrees F.
  • Cut acorn squash in half lengthwise and remove the seeds.
  • Place squash cut-side up in a baking dish. Season with olive oil, salt and pepper, then roast for 45 minutes.
  • Boil lobster (about 10 minutes).
  • Remove lobster meat after lobster have cooled.
  • Saute mushrooms and leaks in a pan with olive oil.
  • Add bacon and lobster meat to the pan, seasoning with salt and pepper.
  • Divide the mixture between the acorn halves, top with breadcrumbs and bake until warm.

  • 1 lb crab meat
  • 14 oz artichoke bottoms
  • 6 oz shredded cheddar cheese
  • 1/2 cup red bell pepper

  • 1/4 cup mayonnaise
  • 3 cloves garlich
  • 1 lemon
  • 2 tsp tarragon
  • 1 tsp Worcestershire sauce

  • 1 round loaf sourdough bread


  • Preheat oven to 375 degrees F and line baking dish with aluminum foil.
  • Mix all ingredients together, seasoning with salt and pepper to taste.
  • Cut the top 1/3 off the loaf of bread, then remove bread filling.
  • Place remaining bread bowl in your baking dish.
  • Fill with mixture and bake for 30 minutes.

  • 3 Tbsp butter
  • 2 cloves garlic
  • 1 onion
  • 2 carrots
  • 2 celery ribs
  • 2 Tbsp ginger
  • 2 lbs pumpkin
  • 2 quarts lobster stock
  • 1 can pumpkin puree
  • 1 cup white whine
  • 1 Tbsp Worcestershire sauce
  • 3 Tbsp brown sugar
  • 2 cups heavy cream
  • 1 cup creme fraiche
  • 3/4 cups cream sherry
  • 2 cups cooked lobster meat
  • Salt and pepper to taste
  • 1/3 cup toasted pumpkin seeds


  • Melt butter in stockpot.
  • Add garlic, onion, carrots, celery, ginger and pumpkin. Saute 15 minutes.
  • Add stock, pumpkin puree and wine. Bring mixture to boill.
  • Reduce heat to medium and simmer until pumpkin is tender (25-30 minutes).
  • Add Worchestershire sauce, brown sugar, cream, creme fraiche and sherry.
  • Puree soup using a hand blender until smooth.
  • Stir in lobster meat
  • Season with salt and pepper to taste
  • Garnish with toasted pumpkin seeds.

  • 1 cup canned pumpkin puree
  • Salt and pepper to taste

  • Melt butter in a skillet and cook shallots until lightly browned.

The Mayo

No lobster taco is complete without a flavorful mayo! Use a southwest mayo for a spicy twist.

For the ingredients you will need:

  • 2 cups mayo
  • Zest and juice of one lime
  • 2 roasted jalapeños
  • 1/2-2/3 tsp salt
  • 1/3 cup cilantro leaves
  • 1/2 tsp chipotle in Adobo
  • 1 tsp paprika
  • 2 cloves garlic

Just add the ingredients to a blender and combine until smooth!

The lobster

Of course, the most important ingredient is the lobster. Maine lobster is some of the best around. The best rolls for lobster are crusty on the outside, yet warm and soft on the inside. Rolls are key for those who don’t consider a meal complete without a proper starch. You can even use the bread to sop up the tasty lobster juices to make the experience last just a little bit longer.

In New England, cornbread is also quite popularly served with lobster. Here is one of our favorite cornbread recipes to pair with fresh Maine lobster:


  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 egg
  • 1 1/4 cups cornmeal
  • 1 cup flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt



  • Preheat oven to 400ºF
  • Grease 8×8″ pan
  • Beat mike, butter and eggs in a large bowl
  • Stop in remaining ingredients until flour is moistened
  • Pour batter into greased pan
  • Bake 20 – 25 minutes or until golden brown

Corn on the Cob

Of course, rather than baking it into bread, you could serve whole corn, right on the cob. It’s one of the most popular lobster side dishes, and seems to make an appearance in every lobster photograph or restaurant experience. Corn on the cob is commonly sliced in half and boiled for a more reasonable portion of the sweet flavor that blends perfectly with fresh Maine lobster tails.


  • Shuck the corn husks
  • Boil water in a large pot
  • Drop the corn in the boiling water
  • Cover the pot and cook the corn for 4-8 minutes


The best thing about potatoes is that you can cook them any way you want, and they’ll still turn out delicious. A baked potato with butter goes perfectly with a lobster(also with butter!). Boiled potatoes are, like corn on the cob, another old standby. And really, what’s a better sidekick than mashed potatoes made with garlic?

  • 2 lbs potatoes (peeled and quartered)
  • 2 tablespoons butter
  • 1 cup milk
  • Salt and pepper to taste



  •  Bring a pot of water to boil
  • Add potatoes and cook 15 minutes – until tender but still firm – then drain
  • Heat butter and milk over low heat until melted together
  • Slowly blend milk and butter mixture into potatoes using a potato masher or electric beater
  • Season with salt and pepper

Green Salad

A vegetable salad provides a fresh, crunchy contrast with the rich and savory taste of lobster. For that reason, make a salad that’s not too rich or complex. You can toss it in your favorite dressing, or allow everyone to choose their own. Fresh, green vegetable alternatives to salad include beans, peas and asparagus.

Of course, the best side dish of all for pairing with lobster is more seafood! Scallops are the most common offering, but shrimp can be served as well. Crab cakes and seafood chowders can also take your lobster dinner to the next level.

Directions for Scallops: 

  • Pat scallops dry
  • Sprinkle with salt and pepper to taste
  • Heat butter or olive oil in a pan
  • Add scallops to the pan in a single layer
  • Cook scallops for two minutes, flip and cook for another two minutes

Ingredients for Garlic Butter Shrimp: 

  • 8 tablespoons butter
  • 1 1/2 lbs shrimp (peeled and deveined)
  • Salt and pepper to taste
  • 5 cloves of garlic
  • 1/4 cup chicken stock
  • Juice of 1 lemon
  • 2 tablespoons parsley


Directions for Garlic Butter Shrimp: 

  • Melt 2 tablespoons of butter in a large skillet
  • Add shrimp with salt and pepper to taste. Cook 2-3 minutes (until pink) then set aside
  • Add garlic to skillet, cooking until fragrant
  • Stir in chicken stock and lemon juice, bring to boil, reduce heat and simmer until reduced by half (about 2 minutes)
  • Stir in remaining butter until melted and smooth
  • Stir in shrimp
  • Garnish with parsley
